I will never forget being a little girl going to my grandparents house for Christmas. My Aunt Lynn would always make this really awesome bean dip that you would see the entire family gathered around. We loved it so much she had to make several batches.
When I moved away from home I asked her for the recipe because I was home sick and thought it would help ease my pain. Her version was made with Frito Bean Dip. Since I watch the ingredients I eat these days I use a regular can of refried beans and I love it just the same. I also find that it is cost effective to use a can of refried beans instead of Frito Bean dip because you would need around 4 jars and it can get pricey, but feel free to try it that way if you want.
So here it what you need!
1 small can of refried beans. I usually get the vegetarian one unless it is out of stock.
1 small Philadelphia cream cheese in a foil pack. It is easier to cut this way
1/2 cup of sharp shredded cheese or mixed mexican cheese blend will work great also.
First you are going to put down a layer of beans.
Then you will cut the cream cheese into chunks and place them on the top of the beans.
Once that is done you will top the cream cheese with some more beans.
Then you will top it with the cheese. Put in the oven at 350 until the cheese is melted. Serve with Unsalted Donkey Chips or tortilla chips of your choice.
Enjoy! Make sure to make more than one batch or double the recipe if you have more than two people. It will go fast!
